Letting inspiration guide him, the chef prepares a soup of the day before dressing a poached egg with fall mushrooms. For the main dish, the smell of the roasted guinea fowl fillet tickles the diners as it is served to them with a purée of parsnips and Brussel sprouts. They can also let themselves be tempted by a tender bite of the trout fillet perfectly paired with risotto primavera.
