Inspired by mathematician Leonardo Fibonacci’s famous spiral theory, Sylvain Proulx, chef-owner of Resto-Loft Fibo combines science and gastronomy to create his menu’s exotic dishes built with molecular gastronomy techniques. In an intimate and upscale atmosphere created by candlelight, colourful art, bricks, and stone walls, appetizers such as shrimp ceviche marinated with wasabi and coriander and topped with basil foam arrive at tables. The mushroom risotto rests beneath shavings of parmesan and a white truffle mousse, and sous-vide salmon is cooked twice before being served with the flavours of dill, sauvignon blanc, celery, and cucumber. The meal ends with the fragrant note of Chanel No.5 crème brûlée flavoured with vanilla, orange blossom, lemon, and violet. Though not included in this Groupon, guests can also enjoy cocktails prepared tableside with liquid nitrogen.
