With an eye for impressive culinary presentations, the staff at Le Resto de l’Institut crafts cold and hot Indonesian small plates featuring seafood, meat, and vegetarian delicacies to facilitate sharing among dining duets. Taste buds awaken with the tangy flavours of the lemongrass vinaigrette that coats morsels of tataki duck breast, marinated shiitake mushrooms, and an herb salad. Cooks dress the steak of a blue marlin with a black-sesame crust before it takes a swim in an earthy mushroom ragout. Guests dunk chicken, lamb, or shrimp skewers with marinated red onions in a rich peanut sauce.
