At Fourquet Fourchette, award-winning chef François Pellerin marries the cuisine of New France and the First Nations of Quebec to traditional Quebecoise ingredients. Keep mouths nimble for snowflake nabbing with entrees such as the venison potpie, a fragrant, hearty stew garnished with cedar jelly, or guinea fowl from Sabinoise Farm, regally dressed in a cape of seared foie gras and oyster mushrooms (lunch table d’hôte $12–$18, dinner table d’hôte $20–$30). Deriving its name from tools of the brewery and culinary trades, Fourquet Fourchette infuses many of its recipes with wort—a brewing byproduct—from the local Unibroue brewery. Complementing these zesty preparations, a brawny selection of Unibroue beers, French and Canadian wines, and local ciders are on deck to wash down meals or toast the talents of live music acts on weekends and nightly during the summer months.

The Chambly location perches on the shores of the Richelieu River, its bay windows offering an eye-entrancing view of the Basin and Fort of Chambly. The Montreal location, meanwhile, extends a spacious sidewalk terrace where diners can inspire the envy of low flying traffic helicopters.
